Peeling and deseeding tomatoes

  1. Put a kettle on to boil.
  2. Make a cross, through the skin,  on the bottom of each tomato (the opposite side to where it was connected to the vine).
  3. Place tomatoes in a bowl and cover with boiling water. Leave for 30 seconds and then drain.
  4. Plunge into a bowl of cold water.
  5. The skins should start to peel away. Using a non serrated vegetable knife, gently strip the skin from the flesh.
  6. You can then quarter the tomatoes and take the seeds out. I use my fingers to remove the seeds, but you can use a teaspoon.
